Banana Oat Muffins


Ingredients

  • 1½ cups flour

  • 1 cup rolled oats (NOT instant)

  • ½ cup white sugar

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 2 eggs

  • ¼ cup vegetable oil

  • ¼ cup milk

  • 3 ripe bananas, mashed


Instructions

  1. Preheat oven to 400 degrees F.

  2. Spray or oil 12 muffin tins.

  3. Put the first six ingredients into a large bowl and stir well to combine. Make a well in the center of mixture.

  4. In a second bowl, using a fork, beat eggs.Add oil, milk and mashed bananas to eggs and stir to combine.

  5. Pour into well and stir to combine ingredients.

  6. Fill muffin cups ¾ full.

  7. Bake in the oven for 20 - 25 minutes or until a toothpick inserted in a muffin comes out clean.
