Peanut Butter Banana Bars


Ingredients

  • 2 Cups Old Fashioned Rolled Oats

  • 1 tsp Baking Powder

  • 1/2 tsp Salt

  • 1 tsp Ground Cinnamon

  • 1 1/2 Cup Milk

  • 1 Large Egg

  • 4 Ripe Bananas

  • 2 tbsp Natural Peanut Butter

  • 2 tbsp Maple Syrup (optional for those who prefer a sweeter baked oatmeal)

  • 1 tsp Pure Vanilla Extract

Instructions

  1. Preheat your oven to 350 degrees F. Grease a medium sized casserole dish (We used a 8x8 dish) and set aside.

  2.  In a large bowl, combine the oats, baking powder, salt, and cinnamon. Add the milk, egg, 2 mashed bananas, peanut butter, maple syrup, and vanilla. Mix well. 

  3. Slice the two remaining bananas into quarter inch slices. Place half of the slices bananas across the bottom of the prepared dish. Pour half of the mixture over the banana slices. 

  4. Next, place the remaining banana slices on top of the oatmeal mixture. Then add the remaining oatmeal mixture on top. 

  5. Bake for 35-40 minutes or until inserted toothpick comes out clean. 

  6. Top with peanut butter and additional banana slices, if desired.

We absolutely loved this recipe! It was great for an easy breakfast or even a quick snack. Whip up a batch the night before and your breakfast is made for several days! Try topping it with additional fruit or for a sweeter treat, honey. We enjoyed drizzling peanut butter and adding extra sliced bananas on top of ours!
