Ingredients
3 cups shredded chicken (cooked)
1 (15 oz.) can Black beans
1/2 Onion
1 Red or green bell pepper
1 Sweet potato, large (cook in microwave for 3 minutes to soften)
1 cup Diced Tomatoes
1 cup Salsa
1 tsp Chili powder
1/2 tsp Cinnamon
1 tsp Garlic salt
2 Tortillas
1/4 cup Cheese (optional)
Instructions
Preheat oven to 400ºF. Spray an 8 x 8 baking dish with cooking spray.
In a large bowl, combine chicken, diced sweet potato, black beans, tomatoes, onion, bell pepper, chili powder, garlic salt, and cinnamon.
Spread ½ cup salsa on the bottom of the baking dish. Arrange a tortilla on top, ripping into strips to get the right fit. Spoon a layer of the mixture over strips. Spread the remaining ½ cup salsa over mixture layer.
Add one more layer of tortillas and then add the rest of the mixture over the tortilla layer. Top with cheese, if desired.
Bake for 20-25 minutes. Cut into squares and serve.
