Ingredients
BBQ Chicken
3 lbs. Chicken Breast
1.5 Cups BBQ Sauce
1/4 Cup Balsamic Vinegar
1 tbsp Worcestershire Sauce
1/4 Cup Brown Sugar
Salt
Pepper
Roasted Veggies
4 Sweet Potatoes
2 Bags of frozen mixed vegetables
2 tbsp minced garlic
Salt
Pepper
2 tbsp Olive Oil
Instructions
Slow Cooker BBQ Chicken
In a large slow cooker, combine the chicken, BBQ sauce, balsamic vinegar, Worcestershire sauce, brown sugar, and a dash of salt and pepper.
Cook the chicken for 4 hours on high or 6 hours on low,
Once the chicken has cooked, shred in the slow cooker and let rest for 20-30 minutes.
Roasted Veggies
Wash and chop the sweet potatoes in to 1/2 inch cubes and place in a large mixing bowl.
Defrost and place the mixed vegetables in the large mixing bowl.
Mix in the olive oil, garlic, salt, and pepper.
Mix until everything is covered evenly.
Set the oven to 400 degrees.
Cook for 20 minutes.
We absolutely loved this meal! The chicken was simple to throw together and it turned out great! We used Open Pit barbecue sauce to cook in since we prefer the taste. After we shredded the chicken we started on the roasted vegetables and the timing couldn't have been better! Since this meal creates a ton of food, its great for a meal prep. Everything re-heats very well and does not dry out (and if it does, just add a touch of barbecue!). Give this meal a try and let us know what you think!
